Introduction

Number of Servings: 18

Ingredients

    2 bananas extra-ripe
    1 cup fiber one whole bran cereal(not flakes)
    1/4 milk
    2 eggs
    1 cup brown sugar
    1/2 plain nonfat yogurt
    1 tsp vanilla
    1 1/4 cupwhole wheat flour
    2 tsp baking powder
    1 tsp cinnamon
    1/2 tsp salt










Directions

In small bowl, mix bran and milk to soften. Puree bananas in blender, add cereal mix, eggs, sugar, yogurt and vanilla to bananas. Blend and stir until well mixed. In large bowl mix remaining ingredients. Pour in banana mixture. Stir until just blended. (At this point you may add raisins, nuts or mini chocolate chips but it will change the calorie information slightly). Divide evenly bewteen muffin cups. Bake in 350 F oven for 25-30 minutes. Makes 18 muffins.
