Introduction

Ingredients

    1 cup white flour
    3/4 cup whole wheat flour
    1/2 cup shredded wheat bran
    12 tsp. SPLENDA Brown Sugar Blend
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    3/4 cup orange juice
    1 egg
    1 tsp. oil (I use olive oil, extra virgin)
    1 cup fresh blueberries
    spritz cooking spray

Directions

makes 16 servings using an 8-1/2 x 4-1/2 x 3 in loaf pan.

Preheat oven to 350 degrees F.
Combine in bowl #1: flours, cereal, brown sugar substitute, baking powder, baking soda and salt. Stir till combined.

Combine in another bowl #2 : orange juice, egg, and oil. Beat this together with an electric blender till well blended.

Gradually add flour mix from bowl #1 into wet ingredients in bowl #2. Stir until moistened. Fold in blueberries.

Spray the 8-1/2 x 4-1/2 x 3 in. loaf pan. Spoon batter into the loaf pan.

Bake about 50 minutes and check. When a toothpick inserted into the center comes out clean, the bread is done!

Remove bread from oven and allow to cool for 10 minutes in the pan. Then remove from the pan and allow to cool completely on a wire rack.
