    8 oz Salmon Fillet, cut into 2 portions, skin removed
    1/8 cup whole wheat flour
    olive oil flavored cooking spray
    salt and pepper to taste


Preheat oven to 425 degrees. Spray baking sheet with cooking spray. Season flour with salt and pepper to taste. Dredge fish in flour and place on cookie sheet. Spray salmon with cooking spray to moisten flour. Bake for approx 20 min until brown and crispy and fish is firm.
