    1 medium sweet potato peeled and cut into 1" pieces
    1 red bell pepper cut into 1" pieces
    1 green bell pepper cut into 1" pieces
    1 medium onion cut into 1" pieces
    1 cup baby carrots
    2 medium ripe tomatoes cut into 1 ' pieces
    1 tsp dired basil
    1 tsp dried thyme
    1 Tbsp dried chives
    3 Tbsp olive oil
    salt and pepper to taste
    crushed red pepper flakes (if desired)


Pre heat oven to 450 degrees. Place all vegetables in large baking dish. Mix oilve oil with seasonings. Pour over vegetables and toss to coat. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes. 6 servings.
