Ingredients

1 lb. lean ground beef
1 lg. onion, 1/2 chopped, 1/2 minced
1/2 green pepper, 1/2 chopped, 1/2 minced
1 egg
1/2 cup bread crumbs
8 oz. sharp cheddar cheese, shredded
8 Tbsps. bbq sauce
* all seasoning to taste

Directions
Combine beef, minced onion, minced green pepper, egg, bread crumbs, and all seasonings until well combined. Knead until fat begins to stick to bowl. Spread beef mixture out to form 1/2 in thick rectangle, onto aluminum foil or wax paper. Sprinkle on cheese leaving 1 inch around outer edge. Roll in jellyroll fashion. Seal both ends and place in casserole dish along seam. Top with chopped onions and green peppers. Cover with foil. Cook in pre heated 375 degree oven for 1 hour. Spread bbq sauce over entire loaf. Return to oven covered and bake in 30 minute increments until internal temperature reaches 160 degrees.
