    1 lb. lean ground beef
    1 chopped onion
    1 chopped green pepper
    1 eggplant, peeled and cubed
    3 cups cooked rice


Brown beef, onion, and green pepper. Add eggplant and continue cooking for about 45 minutes. Add the rice. Salt and pepper to taste. Makes about 8 one cup servings.
