This is a great and different use of left over ham

Number of Servings: 8

Ingredients

    3 cups cooked and cooled rice
    1 can crushed pineapple
    2 cups diced ham
    1/2 cup shredded swiss cheese
    1 cup light mayo (olive oil doesn't work)
    1 T grainy mustard
    1 yellow pepper diced
    2 green onions sliced

Directions

drain pineapple and reserve juice

in large bowl mix mayo, juice, mustard
mix in rice
add ham,peppers and onion
taste add salt and pepper
gently mix in swiss cheese

chill for 1 hour

makes 8 1 cup servings
