Ingredients

    1 lb shrimp
    1 cup canned diced tomatoes, no salt added, drained of juice
    5 cloves garlic, minced
    Red pepper flake to taste
    Salt and pepper to taste

Directions

Heat olive oil in large skillet. Add shrimp and cook until just pink. Add garlic, tomatoes, red pepper flake, salt and pepper. Heat through. Serve over pasta or rice.

Makes six 1/2 cup servings.
