My take on my father-in-law's recipe for bread pudding. He is a chef, and I loooove his bread pudding. The amounts are just guidelines. I prefer mine a little less sweet and without a topping. Ingredients

* Cinnamon, ground, 2 tbsp
* Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, 6 serving
* Splenda Brown Sugar Blend, 3 tsp
* Schwebel's White Bread-Giant, 12 serving
* Dean Skim Choice NonFat Milk, 2 cup
* Nutmeg (optional)
Directions
Makes 12 servings.
Preheat oven to 350 degrees.
Slice the bread into cubes. Place the bread into a casserole dish that you have sprayed with non-stick spray. Sprinkle the brown sugar and cinnamon over the bread cubes. You can adjust the amounts to your taste.
Pour the milk over the bread and stir it. Add a little at a time until it is wet, but not sitting in milk. The amount will change depending on how dry your bread is. melt the butter (or margarine) in the microwave and pour it over the top of the bread / milk mixture. Stir again and let the mixture sit for 15 minutes, stirring every 5 minutes. Press the bread to compact the mixture, making it easier to slice after it is done baking.
Put the casserole in the oven and bake uncovered for 20-40 minutes. If you added too much milk it will take longer to set. You want a nice crust on top, and the pudding to set. remove from the casserole dish and cut into slices.
The recipe is flexible, you can dust it with powdered sugar, caramel sauce, or add raisins, or any combination that you like. I prefer it plain, but for 120 calories, you can add whatever you like. Enjoy warm or cold!
