    1 large onion(s)
    1 medium bell pepper(s)
    1 tsp garlic powder
    1 can of diced tomatoes
    3/4 vegetable both
    2 Tbsp canned tomato paste
    1 tsp cumin (or to taste)
    1 tsp chili powder
    1 tsp dried oregano
    1/2 tsp ground thyme
    1/2 tsp black pepper
    1 C. red (kidney) beans
    5 serving butter-flavor cooking spray
    4 Cups of brown rice


I gave amounts for seasonings but you can use more or less according to your tastes. You could also add red pepper flakes, jalapenos etc if you like spicier foods.


Prepare rice according to package directions.

Spray large sauce pan with nonstick butter spray. Saute diced peppers and onions until they are soft.

Stir in remaining ingredients except for the rice & the red beans. Bring to a boil. Reduce heat to medium low, cover and simmer for 10 minutes, allowing the flavors to mix.

Stir in red beans & rice. Heat through, approximately 5 minutes.

Serve with a salad or veggies.
