Ingredients

    1/2 cup of dry brown lentils
    1/2 cup of brown rice
    2.5 cups of vegetable stock
    1/4 cup of diced basil
    1/4 cup of chopped cilantro
    1/4 cup of chopped parsley
    3 TBS of Red wine vinegar
    1 TBS of EVOO
    1 clove of minced garloc
    # Parsley, .25 cup (remove)
    1 tsp of dijon mustard
    approx 15 kalamata olives diced
    1 cup of diced cucumbers
    1 cup of diced grape tomaotes

Directions

Cook rice and lentils in stock for about 45 minutes. Allow to cool. Add cucs and tomatoes, and olives. Puree herbs, vinegar, oil, and mustard in blender or processor and add to salad. Chill in frig. Enjoy!!
