    Olive Oil, 3-4 1tsp
    Asparagus, fresh, 2 bunches trimmed and cut into 1" pieces
    Scallions 2 bunches - sliced on diagonal
    (added 1 large chopped red onion and 4 minced gloves of garlic)
    Spinach, 2 bunches trimmed
    Lemon Juice, .zest and juice from 1lemon
    salt and pepper to taste


Heat oil over medium high heat. Add Asparagus, red onion, minced garlic and scallions cook about 5 min

add rest of ingredients stirring occasionally just until the spinach begins to wilt, about 2 min. Serve at once, or chill and serve chilled for up to two days.
