    Mama Mary's thin Pizza Crust'
    4 bacon slices, chopped
    1 pkg fresh spinach (10 oz)
    2 teaspoons sugar
    1 Tbsp butter
    2 garlic cloves
    3 Tbsp flour
    12 teaspoon freshly ground black pepper
    1 cup non fat milk
    1 cup grated fresh parmesan cheese (4 oz)


Preheat oven to 475^. To prepare topping, cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons of drippings. Set bacon aside. Add spinach to drippings in pan, saute 2 minutes until wilted. Place spinach in colander, pressing until barely moist. Add onion and sugar to pan, cook 12 minutes or until golden brown and caramelized, stirring frequently. Remove from heat and cool.
Melt buter in a medium saucepan over medium heat. Add garlic, cook 2 minutes, stirring frequently. Add four and pepper, stirring with a wisk , cook 30 seconds. Gradually add milk, stirring constantly with a whisk. Cook 5 minutes or until thick and bubbly, stirring constantly with a whisk.
Spread sauce over dough, top with onions and spinch. Sprinkle evenly with bacon and cheese. Bake for about 20 minutes or until crust edges are browned and cheese is golden brown. Cut into 8 wedges. (serving size= 2 wedges)
