    11/2 c egg substitutes (6 eggs)
    1 10oz package frozen chopped spinach
    3/4 c grated parmesan cheese
    1/4 c diced green pepper
    1/4 c diced onion
    1/4 tsp salt
    1/4 tsp pepper
    1 tsp dijon mustard


Microwave spinach on high for 2 min - drain. Spray muffin cups with cooking spray. Combine egg substitutes, cheese, pepper, onions, spinach and seasoning - mix well. Divide evenly amon muffin cups (1/4 c each). Bake at 350 degrees for 20 min or until a knife inserted at the center comes out clean.
