    1/2 tube Trader Joe's Organic Polenta
    1/2 jar Trader Joe's Bruschetta
    Approximately 1/3 cup freshly grated parmesan cheese


Preheat oven to 425. I use my small stoneware bar pan from Pampered Chef to make this, which measures 8.8" x 6.2" x 1.5", but you can use any similar sized pan. Press the polenta into the bottom of the pan so that it's even and covers the bottom and sides of the pan. Cover the polenta with the bruschetta sauce then sprinkle the parmesan cheese over the top. Bake for 15 minutes or until the cheese is melted and golden. Let cool for 5 minutes. Slice into 4 pieces. Serves 2 at 2 pieces per person.
