Ingredients

    2.5 C Wheat Bran, crude
    1 C Whole Wheat Flour
    1 C All Purpose Flour
    1/2 C Old Fashion Oats
    4 t Baking Powder
    1/2 t Baking Soda
    1 t Ground Cinnamon
    A dash of Nutmeg, Ground Allspice, Ground Cloves, Ground Ginger, Lemon Zest
    1 1/2 C Unsweetened Applesauce
    5 drops of stevia
    1/3 C Honey
    3 Egg Whites
    1 Whole Egg
    1 t Vanilla Extract
    1/8 t Orange Extract
    1 C Fresh Chopped Strawberries

Directions

Spray 2 muffin tins with Pam. Preheat oven to 400 degrees.

Mix dry ingredients in a separate bowl.

In a mixer, combine wet ingredients, except strawberries.

Add flour mixture. Mix until combined.

Add strawberries and mix until combined.

Scoop 1/3 cup of dough into each muffin tin. Bake for 20 minutes or until golden brown on the edges.

Enjoy! Makes 24 muffins.
