    2 medium eggs, well beaten
    1 can evaporated skim milk
    1 cup Splenda, no calorie
    1 tbsp vanilla
    3 cups 8th Continent Fat Free Soy Milk-vanilla


Beat eggs in a microwavable bowl , add evaporated skim milk, and Splenda. Beat well. Heat in microwave for about two minutes or until hot but do not boil. Remove and add the vanilla. Pour into ice cream freezer tub add soy milk and freeze. I use a small ice cream freezer that fits on a mixer. If you want a larger amount double the recipe. Adjust Splenda to your taste. Add Bananas, nuts, Strawberries or what ever kind you want.
