    2 c. Whole Wheat Flour
    1 tsp ground Cinnamon
    2 tsp. Baking Powder
    1 tsp baking soda
    1/8 c. brown sugar (unpacked)
    1 cup, mashed Banana, fresh
    1/4 c. Applesauce, unsweetened,
    1/2 Blueberries, fresh
    1/2 c. Wheat bran
    1/4 C. egg substitute, liquid
    1.8 c, molasses,
    1 tsp vanilla extract
    1/4 c. pineapple orange Banana juice
    (or orange juice)
    1 tsp orange peel


Preheat oven to 350 degrees F . Lightly spray 12 cup & 6 cup muffin pans with non-stick spray.In a large bowl, mix the whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda. In a separate bowl, mix the bananas, egg, molasses, juice, applesauce, bran, and vanilla extract.Mix the banana mixture into the flour mixture until smooth. Fold in the blueberries. Spoon the batter into the prepared muffin pans.Bake 16 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean.. Makes 16 muffins.
