    2 Tbsp Olive oil
    1 large shallot, peeled & thinly sliced
    4 oz fresh mushrooms, sliced
    2 cloves garlic
    8 oz thin asparagus, cut into 1 inch pieces
    1 c shredded sharp cheddar cheese
    6 eggs, beaten
    12 oz low fat cottage cheese
    fresh ground black pepper


1. Preheat oven to 375.
2. In a large skillet, saute the shallots in the olive oil until tender. Add the mushrooms and garlic. Saute until tender. Spread the mixture in the bottom of a quiche pan, or a 10" pie pan.
3. Layer the asparagus over the mixture. Sprinkle 1/3 c of the cheddar on the asparagus.
4. Mix together the eggs, cottage cheese and cheddar cheese. Pour over the layers.
5. Bake for 45 minutes or until golden brown on top. Allow to cool for 5 minutes before serving.
