    4 c. chopped leftover turkey breast
    1/2 onion, chopped
    1 tsp. olive oil
    1 tsp. cumin
    1 tsp. garlic powder
    1 tsp. parsley
    8 oz. reduced fat sour cream
    16 oz. green (verde) enchilada sauce
    15oz. can black beans, rinsed and drained
    2 - 4oz. cans diced green chiles
    2 c. frozen corn
    1 c. salsa
    1 1/2 c. cheese (divided into 1/2 c. portions)
    12 corn tortillas, cut into fourths


Cut up turkey into bite size pieces. Cut onion and cook in olive oil until tender, cool.

In bowl, mix ALL ingredients except cheese and tortillas.

In 9x13 pan sprayed with non stick spray, lay out 12 tortilla wedges, followed by 1/3 of turkey mixture, followed by 1/2 c. cheese. Repeat this 2 more times - ending with cheese.

Bake in preheated 350 degree oven for about 30 minutes or until bubbly.
