    1 1/2 cups Whole Wheat Pastry Flour (or white flour)
    3/4 cup Bob's Flaxseed Meal
    3/4 cup Oat Bran
    1 Cup Brown sugar
    2 tsp. Baking Soda
    1 tsp. Baking Powder
    1/2 tsp. Salt
    2 tsp. Cinnamon
    1 1/2 cuos finely shredded Carrots
    2 peeled & shredded Apples
    1/2 cups Raisins (optional)
    1 cup Chopped Walnuts
    3/4 cup Almond Milk
    1/2 cup Egg Substitute, beaten (2 eggs)
    1 tsp. Vanilla
    2 Tbsp. Vegetable Oil


MIX together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt & cinnamon in a large bowl. STIR in carrots, apples, raisins & nuts. COMBINE milk, beaten egg substitute, vanilla & oil. POUR liquid ingredients into dry ingredients. STIR until ingredients are moistened. DO NOT OVER MIX.
FILL mini muffin cups.
BAKE at 350 for 12-15minutes.
YIELD: 48 mini muffins

Freeze well for a quick healthy snack.
