Ingredients

    3 cups peeled, diced turnips or potatoes
    1 cup diced carrots
    1 cup diced onions
    1 cop diced celery
    1 cup diced red bell peppers
    6 cups water
    1/4 cup minced fresh parsley
    2 cloves garlic, minced
    1/2 tsp black pepper
    3 cups cooked lentils
    1 extra cup water
    2 T fresh minced chives
    2 tsp ground red pepper - optional

Directions

Lightly grease a large stockpot with a bottle of spray oil. Place over medium heat. Add turnips, carrots, onions, celery and red peppers. Saute for 15 minutes, stirring often. Add the water, parsley, garlic and pepper. Bring the mixture to a boil, cover, reduce the heat and simmer for 2 hours. During last hour of cooking add lentils, chives, ground red pepper and 1 cup of water.
