Ingredients

    3 cups zucchini
    2 cups yellow squash
    1 cup red bell pepper
    1 cup red onion
    2 tbsp. olive oil

Directions

preheat oven to 350 degrees. Chop vegetables into large chunks and place into large mixing bowl. Add 2 tbsp. olive oil to veggies and mix until coated with oil. Put mixture into 11x7 glass baking dish, cover with foil, and bake for 45-60 minutes depending on how cooked you want the veggies to be. Serve as a side dish, great with anything grilled.

    Very Good
    i baked them for 45 minutes and put them on the grill for another 5 or so... was easy and yummy and also good with some ground pepper sprinkled on top - 7/22/07
