Fresh fish with a fruity salsa - delicious! Fresh fish with a fruity salsa - delicious!
Number of Servings: 3


    3 4oz salmon fillets
    3 nectarines, stoned and diced
    1 small onion, diced
    3 Roma (plum) tomatoes, seeded and diced
    1 large green bell pepper, seeded and diced
    Juice of 1 lime (or 1 Tbsp bottled)
    Salt & Pepper to taste
    1 Jalapeno pepper, mined (optional)


1) Season salmon with salt and pepper, set aside.
2) Take all other ingredients, toss in a bowl, set aside for at least 10 minutes to allow flavors to develop.
3) Grill or fry salmon (using PAM spray) as desired.
4) serve immediately, topping salmon with salsa.

NOTE: if you leave out the jalapeno peppers, but you still have a guest that would like a little "heat", offer some tobasco sauce. Works just as well, and is easier than separating a serving for individuals.
