    1 20-oz pkg. Turkey Italian Sausage
    2 14-0z cans of diced tomatoes
    3 14-oz cans of beef broth
    1 can of water (empty broth can)
    2 t. minced garlic
    1 t. italian seasoning
    dash of red pepper flakes
    .5 t. black pepper
    4 oz uncooked pasta
    1 14-oz can of green beans
    1 med. zucchini, chopped
    1 box of chopped spinach, thawed


Remove sausage from casings and brown the meat. Drain the fat, then add tomatoes, beef broth, water, garlic and seasonings. Bring to a simmer, and stir occasionally for 45 min. Add pasta, and cook until al dente. Add remaining vegetables and cook an additional 2 minutes, or until zucchini is just translucent.
Makes 14 very hearty 1-cup servings.

  • I LOVE this soup! It has a nice kick to it. And a 2 cup serving is very reasonable calorie wise and is filling for lunch. It's easy to make, just takes some simmering time to meld the flavors. - 4/24/10
