Number of Servings: 6


    1lb of whole wheat penne
    2 TBSP olive oil
    3 Garlice Cloves Minced
    1 Small onion chopped
    1 can of chickpeas
    2 cans of diced tomatoes with oregano and basil
    1 bunch of kale chopped into pieces
    salt and pepper to taste


Cook pasta according to directions. Drain and set aside
Saute garlic and onion in olive oil until soft. Add the remaining ingredients except for the kale. Saute for a few more minuts. Add kale, cover and cook 3 minutes or until soft. Stir to combine all ingredients. Season with salt and pepper. Toss with pasta and serve!
