    Cheddar or Colby Cheese, Low Fat, 2 cup, shredded (remove)
    Cottage Cheese, 1% Milkfat, 340 grams (remove)
    *Spaghetti/Marinara Sauce (tomato sauce), 2 cup (remove)
    Parmesan Cheese, grated, 2 tbsp (remove)
    Egg, fresh, 1 large (remove)
    Eggplant, fresh, 500 grams (remove)


Bake eggplant at about 210 for about 20 mins first, mix egg and cottage cheese with 1/4 cup cheese. Layer marinara with eggplant and cheese and cottage cheese mixture. Finish with cheddar and parmesan and bake for 30 mins at about 200.
