Introduction

I altered this recipe from the back of a can of Campbells Low Fat broccoli cheese soup. It's very good and tastes like its full of fat but its not. I altered this recipe from the back of a can of Campbells Low Fat broccoli cheese soup. It's very good and tastes like its full of fat but its not.
Number of Servings: 4

Ingredients

    1 can Campbells broccoli cheese soup
    12 oz chicken breast
    10 oz bag of broccoli
    1 container of greek yogurt 6 oz
    1/2 cup croutons
    2 tbs I cant believe its not butter light
    1 cup chopped onion
    5 cloves of garlic minces (more or less to taste)
    1/2 cup skim milk
    1/2 cup 2% cheddar cheese shredded

Directions

Spray casserole dish with cooking spray and add chicken, broccoli,onion, cheese and garlic. Mix well. Combine soup, yogurt and milk and pour over the chicken mixture. Add salt and pepper to taste. Again mix well. You can refrigerate or freeze this at this point if you want. If not, crush the croutons while melting 2 tbs of I cant beleive its not butter light. Mix these two together and sprinkle over the top of the casserole. Bake at 350 for 30 mins. I serve it with a side salad and low fat/cal dressing. No one in my family can tell the difference between the higher fat version and this one. MMMM really good.

    Smells and taste Delicious. Although I Find it to be soupy-ish. Next time I fix it i will use fresh broccoli and see if that helps. Maybe an egg or two also. - 3/25/17
