    4 cups white rice (minute rice)
    2 large eggs
    1 cup of frozen peas and carrots
    2 tsp margarine
    1 tbsp lite soy sauce


prepare 4 cups of minute rice, set aside

in a large skillet on medium high heat (or a wok) heat 1 tsp of margarine - add 2 large eggs and scramble, throw in 1 cup of frozen veggies and thaw and then add the 4 cup sof rice - stir constantly - add lite soy sauce and continue stirring, cook for 5 - 10 minutes and then remove from heat.
