    1/3 C. Country Choice Multigrain Hot Cereal (uncooked)
    2 T. brown sugar
    1 T. earth balance, melted
    1.2 t. ground cinnamon

    1 C. Country Choice Multigrain hot cereal (uncooked)
    1 1/2 C. organic flour
    1 t. baking powder
    1/2 t. organic ground cinnamon
    1 C. unsweetened applesauce
    1/2 C. soy milk
    1/2 C. brown sugar
    1/4 C. sunflower oil
    1 serving Egg replacer (equivalent to 1 egg)


Preheat oven to 400 degrees

Line 12 muffin cups with paper baking cups or lightly oil

Prepare topping by mixing oats, brown sugar, and cinnamon together. Add melted butter; mix well.

Prepare muffins by combining oats, flour, baking powder, baking soda, and cinnamon in a large bowl.

In a separate bowl mix together the applesauce, milk, brown sugar, oil and egg replacer.

Add to the dry ingredients and stir until dry ingredients are moistened.
