    3 bell peppers, any color
    10 oz ground lean turkey
    1 cup sliced mushrooms
    1can of traditional spaghetti sauce
    8 oz ricotta cheese, fat free
    1 egg
    1.5 cups of mozzarella cheese, part-skim


Preheat oven to 350

Blanche peppers, after removing seeds and membrane, in boiling water for 3 minutes.

Brown ground turkey in skillet with spices of your choice (not included in nutritional info). Add mushrooms. Add sauce.

Mix together ricotta cheese, egg, and black pepper to taste.

Cut peppers in half long ways and divide ricotta mixture between them. Top with meat sauce and then mozzarella cheese. Bake until cheese is melted and bubbly.
