    Coarse Salt
    1 pound bow tie pasta
    1/4 cup extra virgin olive oil (EVOO)
    2 garlic cloves, minced
    1 pound asparagus
    coarse black pepper
    1 cup grated parmigiana-reggiano cheese (or romano)
    1 cup fresh basil leaves, torn or shredded (about 20 leaves)
    1 shallot, thinly sliced
    1 cup frozen peas
    1/4 pound prosciutto, chopped or shredded


Bring a large pot of water to a boil and salt it. Cook the bow ties al dente. ***Heads up: you will need a couple of ladles full of pasta water later on!!
Halve each stalk of asparagus lengthwise, then cut crosswise into 2-inch pieces.
Heat a large skillet over medium heat and add the EVOO. Sauté the garlic and shallot for two minutes. Then add the asparagus and cook for 5 minutes. Add the pasta water, drained pasta and the cheese. Add the peas and prosciutto as you toss. The peas will heat through quickly. Season with salt and pepper and serve with the basil leaves on top.
