Introduction

This dish was one of my family's faves but I was attempting to make it healthier. I used whole wheat tortillas, extra lean ground beef (I'm going to try turkey next time) and low fat cheddar cheese. Ingredients

    1 lb. ground beef, extra lean
    1 c. black beans, (drained and rinsed)
    1 c. frozen corn
    8 whole wheat tortillas
    2 c. spaghetti sauce
    1 c. medium salsa
    1.5 c. shredded cheddar cheese
    1 c. chopped onion

Directions

Brown the burger and onions together until cooked. Add the black beans and corn and cook for two minutes. Add the spaghetti sauce and salsa, cook for two more minutes.

Spread 1/3 of the sauce mixture on the bottom of the baking dish (13x9). Top with 4 tortillas, cut to fit. Cover with 1/3 of the cheese. Continue to layer until ingredients are gone.

Bake at 375 for 20-25 minutes with tin foil cover. Remove tin foil and cook for another 5-10 minutes until cheese is bubbly.
