Introduction

Ingredients

    14 oz (by weight) shredded sweetened coconut
    14 oz sweetened condensed milk
    2 large egg white, room temp
    1 cup extra dark chocolate chips
    tsp vanilla
    pinch of salt

Directions

Preheat oven to 325 degrees F. Mix shredded coconut with the sweetened condensed milk and vanilla, set aside. Beat egg whites and a pinch of salt until stiff peaks form. Fold in egg whites to coconut mixture and fold in chocolate chips. Using a 1 and 3/4 oz measuring scoop, scoop 12 mounds onto a lightly greased baking sheet. Bake for 25 minutes.
