    1 onion, finely chopped
    1 - 2 cloves garlic, finely minced
    300ml Vegetable Stock
    3 tsp cornflour, to thicken if necessary
    Tamari (gluten free) soy sauce
    pinch or more of chilli powder/ chopped fresh chillies

    300g chicken breasts
    1 tin butter beans (125g drained)
    1 large aubergine, sliced (about 385g)

    Salt and pepper to season
    Rocket/ coriander


Simmer onion and aubergines in stock for about 10 minutes. Thicken with a little cornflour slaked in water.

Add chicken, butter beans, chilli and soy sauce. Simmer gently for 8 - 10 minutes, until chicken is cooked through, but still tender.

Stir in herbs and season.

Serve with rice and salad
