Ingredients

25 RITZ Crackers, finely crushed (about 1 cup crumbs)
1/2 cup finely chopped PLANTERS Dry Roasted Peanuts
1 egg
1-1/2 lb. boneless skinless chicken breasts, pounded to 1/4-inch thickness
2 Tbsp. oil, divided
1 cup sliced mangoes (about 1 medium)
1/3 cup KRAFT Mayo Real Mayonnaise
1/4 tsp. ground red pepper (cayenne)
Directions
MIX cracker crumbs and peanuts in shallow dish; set aside. Beat egg with wire whisk in medium bowl. Dip chicken in egg, then in crumb mixture, turning to evenly coat both sides of each chicken piece with the crumb mixture; gently shake off excess crumbs.
HEAT 1 Tbsp. of the oil in large nonstick skillet. Add half of the chicken; cook 5 min. on each side or until cooked through (170°F). Repeat with remaining oil and chicken.
PLACE mangoes, mayo and pepper in food processor or blender; cover. Process until smooth. Pour through a strainer; discard strained solids. Serve mango mixture as a dip with the chicken.
