Introduction

I have a thing I make that I call surprise rice which means left over cooked rice and what ever we have in the fridge to fancy it up. I tend to use lots of veggies and a little sauce and spices. Ingredients

    1 red onion chopped
    3 cloves garlic chopped
    1 3.5 oz package mushrooms (I used shiitake)
    4 to 5 small tomatoes
    1.5 TBS olive oil
    1 package Boca meatless grounds
    2 cups cooked brown rice
    3/4 cup taco sauce medium
    spices of your choice I put in some basil and oregano

Directions

sautee onion, garlic and mushrooms in olive oil
puree tomatoes in blender and add any spices you may like
add grounds cook until hot
add rice mix up
add sauce from blender and taco sauce
cook until hot
My kids ate theirs on whole wheat bread
I had mine over a plate of raw baby spinach
YUM!
