    2 roma tomatoes, chopped
    2.5 cup sliced mushrooms
    1 red bell pepper, chopped
    1 green bell pepper, chopped
    1 medium onion, chopped
    1 zucchini, chopped
    3 cloves garlic, minced
    2 cups egg substitute
    1/4 cup milk
    1/4 cup grated parmesan cheese
    cooking spray
    salt and pepper to taste


Spray a pan with cooking spray. Sautee all vegetables together (with garlic) until soft. Mix egg substitute, cheese, and milk. Add to vegetables. Bake @ 350F for 20 minutes or until cooked thoroughly. Serves 3.
