Ingredients

cheese- 1 TBSP parmesan and 3 oz mozzarella
1 egg
10 oz cup nonfat plain yogurt
2 eggplants (peeled)
14.5 oz can of diced tomatoes (can either be plain or with garlic, basil and oregano)
1 cup diced onion
2 tsp garlic
nonstick olive oil spray
12 oz (1 bag) of Morning star farms griller recipe starters
Directions
1- preheat oven to 350 degrees.
2- slice eggplant to make 1 inch coins
3- place each piece on baking trays sprayed with nonstick cooking spray (make sure the pieces don't overlap)
4- put in oven for approximately 10 minutes until golden and soft
5- spray frying pan with nonstick olive oil spray
6- place 1 cup diced onion in pan and cook until tender and translucent
7- add garlic to pan
8- once heated place the 12 oz (1 bag) of Morning star farms griller recipe starters in the pan and heat through breaking apart all big pieces
9- place a layer of eggplant in the bottom of a lasana pan
10- pour the tomato/morning star griller combination evenly on the eggplant
11- make another layer of eggplant on top of the mixture
12- in a seperate bowl beat the egg. Then add the yogurt. combine. add salt and pepper to taste.
13- pour the yogurt mixture evenly on top of the eggplant
14- spread the parmesan and mozzarella cheese evenly over the yogurt mixture
15- bake in over for 45 minutes

This is similar to mine but I've not used the egg and yogurt, can't wait to try YOURS! Sounds yummy! I've marked it saved to try the next time I get some decent eggplant!
