These creamy chicken enchiladas will become a family favorite! These creamy chicken enchiladas will become a family favorite!
Number of Servings: 8


    1 LB Skinless chicken breast- boiled
    2 8oz. cans of reduced calorie cream of chicken soup
    2 small cans diced green chilies
    1 8oz package of sour cream
    1 pkg Mexican blend shredded cheese
    8 medium size flour tortillas


Boil chicken until cooked through
Pre-heat oven to 350 degrees.
Combine chicken, soup, chilies, sour cream, and half of the package cheese. Stir until mixed well.
Use a large spoonful of mixture to fill each tortilla. Place tortillas in 81/2 x 11 pan. Reserve some of the mixture to spread over the top of the tortillas. Bake in oven for 30 minutes, until bubbly. Before removing from oven spread the remaining cheese on top and cook for 5 more minutes. Let cool for about 5 minutes before serving.
Makes 8 servings of 1 tortilla each.
