Introduction

Ingredients

    2 large Eggs
    5 large egg whites
    1 Cup unsweetened applesauce
    2 Cups mashed bananas
    5 oz frozen mixed vegetables (while frozen chop to confetti like texture in food processer)
    ˝ Cup Brown sugar
    1 Cup granulated sugar
    ˝ Cup Wheat Bran (millers bran)
    2/3 Cup White Flour
    1 1/3 Cup whole wheat flour
    ˝ tsp Baking Powder
    2 tsp Baking Soda
    1 tsp Salt
    3 tsp Cinnamon
    1 tsp Nutmeg
    1 tsp Ginger
    ˝ tsp Cloves
    2 tsp Vanilla Extract

Directions

Mix eggs, egg whites, applesauce, bananas, vegetable confetti, brown sugar, white sugar, and wheat bran until well blended. Sift white flour, wheat flour baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cloves and blend thoroughly. Gently stir in vanilla. Pour into lined/greased muffin tins, bake at 350 degrees (makes approximately 30 muffins) or mini loaves of bread or mini muffins or 2 large loaves (bread will take longer to cook—up to an hour). Enjoy!
