Introduction

A great variety of flavors, colors and textures. Makes a nice meal for family or friends. The chicken can be excluded for a vegetarian dish. A great variety of flavors, colors and textures. Makes a nice meal for family or friends. The chicken can be excluded for a vegetarian dish.

Ingredients

    Two cans baby corn spears
    2 cans artichoke hearts- quartered
    2 cups of water chestnuts
    2 small cans of mushrooms (1 cup)
    3 oz sun dried tomatoes (no-oil)
    1 oz fresh basil
    2 chicken breasts- no skin no fat

Directions

In a food processor, finely grind tomatoes and basil. Grill or bake chicken (I don't use oil).
In a stock pan, add and heat vegetables, stirring occasionally. After chicken is done- add chicken and ground tomato/basil mix and stir.
Pepper to taste, serve.
