Number of Servings: 12

1 can black beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
2 cups frozen shelled edamame (soy beans), thawed
1 medium onion (I prefer red onions), diced
    3 Tbs. olive oil
    3 Tbs. balsamic vinegar
    3 cloves garlic, minced
    1 tsp. ground cumin
    pepper to taste

Drain and rinse black and garbanzo beans. Mix with edamame and onion. In small bowl, combine oil, vinegar, garlic, cumin and pepper, adjusting oil and vinegar to taste. Add to bean mixture, stirring to coat. Refrigerate at least two hours for best results.

Makes about 12 1/2 cup servings.

* This is also terrific as a salad topping - no other dressing needed, and you won't miss having meat in your salad!

    Very Good
I added a couple extra tablespoons more of balsamic vinegar, a chopped red pepper and squeezed the juice from 3/4 of a lime I had to use up. It is very tasty and I will definitely make again. - 10/26/17

I loved this salad! I ate it all week on it's own or as a topping for green salad or in a wrap with other veg. I upped the basalmic but it was great. - 2/21/09

My variation includes red pepper and fresh basil leaves. Haven't tried it with cumin and garlic but it looks good - 4/13/08
