    1/2 cup bulgar
    1 cup boiling water
    1/2 cup canned white beans, drained
    2 tbsp cashews
    3/4 cup grated carrot
    1/2 cup fresh spinach, cut into thin ribbons
    1/2 tsp ground white pepper
    1/2 tsp paprika
    1 egg
    1/4 cup breadcrumbs
    1 tsp olive oil


Combine bulgur and boiling water in heatproof bowl. Cover and let soak for 30 minutes

In food processor, combine white beans and cashews. Blend until paste is formed. Place into medium bowl. Stir in carrots, spinach, pepper, paprika and egg. Add bread crumbs and bulgur and mix well.

Heat olive oil in large skillet. Measure out scant 1/2 cup portions and place into skillet. Flatten slightly with back of spoon to form patty. Cook for 4 minutes, then flip and cook for additional 3 minutes, or until heated through and golden brown.

Serve with chili cole slaw.

Makes five scant 1/2 cup patties. Can serve with rolls if desired (calorie content does not take this into consideration)
