Just a simple omelet with lots of flavor. Just a simple omelet with lots of flavor.

Ingredients

    2 eggs
    frozen spinach
    feta cheese
    salt
    1% milk

Directions

In a small bowl, beat together eggs and milk. A dd salt or other spices and pour into a small frying pan. Cook at medium heat occasionally peeling up the edges with a spatula and gently rolling the pan to redistribute eggs until the are nearly cooked through. Add spinach, either thawed or still frozen, and feta. Fold half of omelet over and continue cooking until solid. About 10 more minutes. Serves one or two.
