Introduction

Number of Servings: 24

Ingredients

    3 Eggs
    2 cups Splenda
    1 cup Canola Oil
    2 cups grated zucchini
    2 tsp. vanilla
    3 cups flour
    2 tsp. cinnamon
    2 tsp. salt
    1/4 tsp. baking powder
    t tsp. baking soda

Directions

Beat 3 eggs in large mixing bowl
Mix in 2 c. Spenda, 1 c. oil, 2 cups grated zucchini, 2 tsp. vanilla. Mix well.
Mix in 3 c. flour, 3 tsp. cinnamon, 2 tsp. salt, 1/4 tsp. baking powder and 1 tsp. baking soda.

Bake for about 1 hour at 325 degrees in a loaf pan.
