Number of Servings: 4


    2 lbs Boneless Skinless Chicken Breast
    2 cups Rice Cereal
    1/4 cup Parmesan Cheese, grated
    2 tbsp Margarine spread
    1/4 cup Skim Milk
    1/4 tsp Salt
    1/4 tsp Pepper, black
    1 tsp Italian Seasoning
    1 tsp Basil and Garlic Seasoning
    1/4 tsp Citrus Grill seasoning


Preheat oven to 400 degrees.
Place cereal in a quart-sized zipper seal bag, leaving a tiny opening at the corner to keep the bag from bursting. Crush cereal with a rolling pin or pizza roller. Add cheese, salt, pepper, Italian seasoning, basil and garlic seasoning and citrus grill seasoning.

Rinse and dry chicken with paper towels. Use a small bowl or deep dish for the milk and different bowl or dish of the same size for the cereal mixture. Dip chicken into milk then into cereal mixture, lightly on the bottom and well coated on the top side. Place chicken in a baking dish. Press remaining crumbs onto chicken.

Bake for 40-45 minutes or until chicken is no longer pink in the middle.

Serve with Parmesan pasta.

Makes 4 servings. If too much make it 8 servings.
