Introduction

Soft, moist, yummy and full of several types of fiber! Soft, moist, yummy and full of several types of fiber!
Number of Servings: 12

Ingredients

    MIX:
    3/4 cup whole wheat flour
    1/2 cup white flour
    1/2 cup oat bran
    1/2 cup ground flax seed
    1/2 cup brown sugar or sucanat
    1/4 tsp salt
    1 1/2 tsp baking powder

    BLEND:
    1 large orange, peeled
    1/2 cup buttermilk
    1/4 cup canola oil
    2 eggs
    1 tsp baking soda

    Optional: 1/3 cup cranberries

Directions

Heat oven to 375 degrees F.
Mix flours, oat bran, ground flax, brown sugar, salt, and baking powder in bowl. Peel orange and put sections in blender with buttermilk, canola oil, eggs and baking soda. Blend well. Stir wet ingredients with dry ingredients until just moistened, and then add cranberries. Pour into greased muffin tins and fill 3/4 full of batter.
Bake for 18-20 minutes.
Makes 12 muffins.
