    2 lbs. medium Roma or plum tomatoes (10-12) halved lengthwise

    1/2 cup olive oil, divided

    2 cloves garlic, minced

    1 tablespoon Italian seasoning (I recommend McCormick Italian Seasoning Grinder)

    1/2 teaspoon crushed red pepper

    1/2 teaspoon Sicilian sea salt

    1/4 teaspoon coarse ground black pepper

    8 ounces fettuccine pasta


Makes 6 8 oz servings

Pre-heat oven to 400 Degrees F.

Place tomato halves in a foil lined 13x9 pan sprayed with no stick cooking spray. Mix 1/4 cup olive oil, seasonings, and garlic in a bowl. Spoon onto tomatoes, drizzle the tomatoes with 2 table spoons olive oil.

Roast in oven 45 minutes to an hour, or until tomatoes are soft and browned on top.

Meanwhile, prepare pasta as directed on package. Drain well.

When tomatoes are done, place half of the grilled tomatoes and remaining olive oil (2 tablespoons) in a large bowl. Coarsely crush the tomato and olive oil mixture. Add pasta and the rest of the tomatoes. Toss to mix well.
If desired, sprinkle with parmesan or romano cheese.
