Chicken stir fry with with a Thai basil penut sauce. Chicken stir fry with with a Thai basil penut sauce.

    4 tbsp Lite Soy Sauce
    6 tbsp reduced fat Peanut Butter
    6 tbsp Rice Vinegar
    2 tbsp dried Basil
    2 tbsp water
    1 lb Chicken Breast cut into bite sized peices 2 2 cups frozen Veggie Stir Fry
    Non Sitck spray

    Brown Rice

    Pinch of Red Pepper Flakes


Heat pan over med-high heat

In a blender mix soy sauce, peanut butter, vinegar, and water till smooth.

Spray pan with non stick spray. Sprinkle chicken with basil and redd pepper (optional) and cook 10 mins till almost cooked through. Add in veggies and heat. Stir sauce over all and serve over brown rice.
